Not only is this treat something you can feel good about giving your child (because of the clean, nutritious ingredients) but you can also have fun with your kids and make them together. Get them involved! Warning: it can get messy (exhibit A below), so gauge your patience that day and decide from there…
Choco-Nut Butter Healthy PopsiclesPRINT
WHAT YOU'LL NEED
- Popsicle Molds
- 1 Cup Almond Milk
- 3/4 Cup Plain Yogurt
- 1 Large Ripe Banana
- 2 tbsp Vanilla Almond Butter (or Almond Butter, or Peanut Butter)
- 2 tbsp Unsweetened Cocoa Powder
- 1 tbsp Honey
- 1 tsp Pure Vanilla Extract
- 1 tsp Ground Flax Seeds (optional)
The instructions couldn’t be more simple. Pour a small amount of Rainbow Sprinkles into the empty Popsicle Molds (a little goes a long way. I usually do a generous “pinch” with all fingers). Blend all of the ingredients together in your blender (as you would a smoothie). Pour mixture into the popsicle molds (on top of the sprinkles) until they’re full, and set these into the freezer for 30 minutes before inserting the popsicle handles. (On a few occasions, I haven’t had time for the 30-minute prep and placed the handles/stick into the molds immediately, then froze them. I didn’t notice any problems when it was time to eat one. Just an FYI).
After 30 minutes (ideally) place the handles (caps) onto the molds and place in the freezer for about 4 hours. Then it’s time to indulge in a guilt-free, nutritious, refreshing and tasty treat for both you and the kids! It’s one of our favorite summertime family staples… and will satisfy that sweet tooth that’s been yelling at you for the past few hours.
