Chia seeds are loaded with nutritional benefits to keep you, and your family, strong and healthy. They’re very rich in antioxidants, fiber and calcium. According to Medical News Today, eating once ounce of chia seeds each day would provide 18 percent of daily calcium needs, 27 percent of phosphorus, 30 percent of manganese, as well as being loaded with Omega-3 and Omega-6 fatty acids. Compared with flaxseed, chia seeds provide more omega-3s, calcium, phosphorus, and fiber – which most of us don’t consume enough of! This is a yummy easy way to implement these nutrients into your diet – and a great recipe your children will likely enjoy as well!

WHAT YOU'LL NEED
- 1 1/2 cups Almond Milk (Vanilla)
- 2 tbsp Pure Maple Syrup
- 2 tsp Pure Vanilla Extract
- 8 tbsp Chia Seeds
- TOPPING: Almonds (ideally Oven-Roasted, Raw is fine)
- TOPPING: Handful Raspberries (or any berry)
- TOPPING: Unsweetened Coconut Flakes
- TOPPING: Honey for drizzle (optional)
You’ll need two mason jars. This is a double batch – since my girls enjoy it as well. Split the ingredients between the two jars. It’s easier to add all together in a large bowl, mix, then split evenly between the jars. Once all the ingredients are split between the mason jars (or any jar with a tight lid), shake well (the kids might enjoy this part, just remember.. it’s glass)!
Set the jars in the refrigerator for 8 hours, or overnight. Once you’re ready to eat, add the “toppings” as you wish! If you want to take it to the next level, “candy” the Almonds in a pan with Agave Nectar and a little drop of butter. Enjoy!
