Ok… when you hear the word Kale, it might make you run in the other direction. But hear me out – the bitter, rough texture that likely left a bad taste in your mouth (literally) might not have been prepared in the best way. Before even contemplating what to add to a Kale salad, you should first trim the stems off the Kale and massage the leaves in a bowl with EVOO (coconut oil or grapeseed oil) and lemon juice – then let sit for 15 minutes. This softens the kale so it’s easier to chew, and more palatable.
Maple Strawberry Kale SaladPRINT
WHAT YOU'LL NEED
- Red Cabbage
- 4 Golden Sweet Tomatoes (small yellow, or red cherry tomatoes are fine)
- 4 Large Strawberries
- 1 Avocado
- Small sprinkle of Goat cheese or Feta (optional)
- Palmful Golden Raisins
- Palmful Chopped Almonds (Tamari or Dry Roasted)
- 1/2 tbsp Maple Syrup (for Strawberry Glaze)
- Sesame Seeds (to top the salad)
- 1 tbsp EVOO (or coconut, grape seed, avocado oil)
- 1 tbsp Unfiltered Apple Cider Vinegar
- 1 tbsp Maple Syrup
- 1/2 tbsp Tahini
- Minced Garlic (1 clove or 1 tsp jarred)
- 1 tsp Lemon Juice
- 1 tsp Sriracha (optional)
Trim stems off Kale (I usually use 1/2 large bag of Kale), and place leaves into a bowl with a drizzle of 1/2 tbsp EVOO (or preferred oil) and a 1 tsp of lemon juice. Adjust the portions of oil and lemon depending on how much Kale you’re using. If you’re making a smaller single serving, start small – you can always add more oil + lemon afterwards. Massage the leaves with the liquid until they’re fully coated. Set aside for 15 minutes while you prep the rest.
Slice strawberries and place into a pan on low-medium heat. Drizzle 1/2 tbsp of Maple Syrup over the strawberries, and let sit and simmer for 5 minutes, occasionally stirring.
Chop the cabbage, and cube the tomatoes and avocado – add to the Kale bowl. Add golden raisins, chopped almonds and cheese (if you prefer). Turn off the heat on strawberries – let these sit and cool for a few minutes while you shake up the dressing…
In a mason jar (or dressing mixer of choice) combine the dressing ingredients and shake well! If you’re having an overwhelming day, feel free to shake out your emotions with the jar.
Add the strawberries to the Kale salad. Then slowly drizzle 1/2 your homemade dressing over the salad. Mix well together. If you think it needs more dressing, go ahead and add the rest! Some people prefer different amounts of dressing – it’s easier to add dressing than take away. Sprinkle with sesame seeds… and ENJOY!
